I loved eating Mexican Casserole and Enchiladas growing up as part of my family's traditional, so I decided to make my own. Now this is my recipe that I plan on handing down to my children. The "Mexican Celebration" is to represent the Mexico Flag, with Red, White & Green, same as my 3 sauces present in and on this dish. Hope you enjoy!
My great grandma made shrimp & grits for me when I was little in a heavy cast iron skillet. I made a few adjustments, but kept it close to her original recipe. Miss you Grandma Tiny!

This just melts in your mouth! You can also shred it and make a pulled chicken sandwich. I think it would be awesome the next day, still marinating in the sauce and make sandwiches with it. I like paring it with some baked red potatoes and broccoli. Enjoy! This is my DH's new fav!
My homemade pizza dough that I make in my bread machine. The recipe makes 6 servings: I divide the dough three ways, and freeze. Each dough ball makes 2 individual pizzas.

This is a tasty chicken burger recipe with bun included... I use Healthy Life light buns they are pretty good without the guilt ;) I also used Kroger american cheese slices so if you dont add that you can subtract 60 calories from the portion! I sometimes like to mix it up put a wedge of laughing cow light (35 calories) and sauteed/grilled onions and mushrooms! :D Its super good! Top with whatever toppings you like basically! I recommend Olive oil based mayo its 40-45 calories a serving so lower in fat and calories and tastes better than regular mayo! :)
Great and simple potato salad. This is the original recipe, I'm sure it can be made lighter by using low fat versions of the mayo and salad dressing.
This pasta salad can be served hot or cold, because of this it is great for leftovers. Use whatever veggie is in season. This is not a very saucy dish, think of it as a dressing more than a sauce.
