This is an easy to make treat for one. Tastes like apple pie with cheese and satisfies the sweet tooth. I've made it with all types of flour tortillas and prefer the whole wheat, low carb ones.
Preparation: 1-1.5 hours (active, about 15-20 minutes), 25-30 minutes chilling time; optional 2 hours to 'ripen' in the freezer.

Super easy! - from Mrs. Fred Valentich, given to me by Winnie Pandol. They make this in the office from time to time. Yummy! Mrs. Valentich says " This is not my original recipe but it's one of those that gets handed around over the bridge table, across the fence or over a 10 o'clock cup of coffee. But it's so delicious. My family loves it. And it's so easy to make." And we love it too! - Beware, this *is* the type to make you lose control, so only make this when you know it is going to get eaten and have no leftovers!
This is wonderfully rich and tangy, but should be eaten only occasionally for special occasions since it is so high in calories.
These are heavenly! Kind of a combination of pumpkin pie and cheesecake. If you're making the bite-size minis, they are a little time consuming. But it makes a HUGE batch--72-ish minis. You could also make this into one big cheesecake in a spring form pan, or single-serve with regular size muffin pans. I used the mini-muffin pan for these.
This is so good and always a crowd pleaser! I get requests to make it for every event, holiday and sometimes for no reason at all.
