I came up with this dish one night when I hadn't started anything for dinner, but I was hungry! Nutritional info includes rice.
This was thrown together on a cooking night when a friend came over to try a couple of new recipes. We love the idea of low carb cheesecake and decided to mix it up a bit. She said it was "blueberry yumcake" Obviously you could substitute your favorite fresh fruit and you might not want as much cinnamon or to put the cinnamon in the crust instead of in the cheesecake.

Black bean & protein powder combined in a slow cooker... mmm
this was adapted from a recipe found in Kraft Foods. It didn't turn out as pretty, but it was still yummy - though a bit rich. I had to use 1% milk instead of skim and low fat cream cheese instead of fat free. The chocolate was a bit much, so it would probably be good without it.
This is a dish my dad always used to make when I was a kid for special occasions.The coconut is optional, but the calories are figured with it in it.
