You can make the sponge bit the day before and then put the filling in a couple of hours before serving and keep it in the fridge. I always dish it up with raspberry coulis (very easy to make, I’ve included it in the recipe) and frozen yoghurt or ice cream. Yummy!
this is a healthier take on the traditional rice pudding. you could save a few more calories if you use soy milk or splenda.

These are partly organic (flour) and 1/2 the fat due to using applesauce and reduced sugar (1/2 sugar using Sucanat). Extremely delicious. Kid tested mother approved.
Based on a Cooking Light recipe without the walnuts and a more realistic portion size. (Original recipe called for 20 servings, I'm calling for 9)
