I just love summer. My favorite summer flavor is lemon, and this cake is full of it! This was one of the first cakes I made as a child, it’s incredibly simple to make and it’s very delicious. A thick slice of this cake is my family’s favorite summertime dessert, and it gets only better with age!
This meringue type frosting is a childhood favorite of mine on angel food cake. It's pure white, fluffy, VERY sticky, and tastes like marshmallow fluff. Fat free and low cal to boot. YUM!

This is an accidental adaptation for the no-butter sugar cookie recipe found on the blog: A Foodie Loves Company. I say accidental because her recipe calls for 2/3 cup canola oil however I substituted vegetable oil and accidentally used 3/4 cups instead of 2/3 cups. They still turned out quite nicely.

The original recipe calls for 2 Tbls. agar flakes; I substituted one packet of gelatin.
I served the cheesecake at a soccer tailgate (thus the 16 servings) and everyone liked it; NOT ONE person said, "Eeewww...tofu".

No eggs? No problem. A great way to get healthy fat from coconut and so easy to make. Will please anyone who likes coconut; not just health foodies! You can absolutely use stevia instead of or in addition to the agave nectar.
