Here is a quick and easy dinner idea my sister created. I made it a little more healthy by cutting down the amount of butter and substituting brown rice. You could substitute scallops for the shrimp if you like.
Keto updated from an old favorite, (which had had carrots, rice and peas added). If you aren't doing Keto, this was always a quick family favorite.
I make no claims to authentic enchiladas here, this is just my method! But, they're a great "clean out the fridge" food that's pretty enough for company to boot! You can sub beans for the meat, or do a mixture, add any veggies you like (corn and bell peppers, oh yeah!...even cooked cubed potatoes/yams or winter squash). Try it with kale or chard instead of spinach, basically use your imagination!
This is a great veggie main, and the lefotver rice makes great faux-meatballs if you use a glutinous rice to begin with. But it's great with any variety of long grain rice, so enjoy! In Egypt, this is also served with elbow macaroni mixed in, but I had it both ways when I was there and I find I prefer it without the pasta (it made it too heavy for my tastes). I've also used the tomato sauce as a pasta sauce before--it's a nice low-cal change of pace!
This is meatloaf with some added veggies it tastes amazing! You can substitue with ground turkey for less calories, great with cauliflower mashed potatoes.
Cut green bell pepper into strips. Chop mushrooms. Place pepper, mushrooms, and chicken onto a foil lined pan (preferably with edges to catch juice from chicken) Bake for 20 minutes at 375 degrees. Rest for 5 minutes then slice and serve on salad, rice, noodles, or tortillas!
These stuffed Portabella caps makes a great entrees, or, if you have enough calories to use, they can be a delicious side dish. This recipe is for one stuffed mushroom cap. Multiply it by the number of people you wish to serve.
Chicken Cordon Bleu is elegant enough to serve for for company yet simple enough to please any palate, especially picky family members.Traditionally when ordered in a restaurant, this dish is fried. Baking them works just fine and no one will noticed you used reduced fat Swiss. Enjoy!
