Substitute low-fat or fat-free cheese and Healthy Request soup for lower cals and less fat (I didn't have it on hand this time).
The Heidi Swanson recipe I make most often. I eat this with disturbing regularity, normally with a poached egg on top at home. When I take it to work for lunch I take an avocado with me to add after I've reheated it.
This is South Beach appropriate. Even more so if you use ground turkey instead of beef. But, I like the flavor of beef. :-)
This rice has a rich, creamy texture as if cheese had been added to it. The olive oil, onion, and turmeric have nice, mild flavor that compliments seafood, pork, & chicken as well as most vegetables (especially stir-fry). Add 1/2 cup chopped cooked broccoli to it as a substitute to substantially higher calorie/saturated fat broccoli/cheese rice. Each serving is 1/2 cup.
Moist, tender corn bread is traditionally crumbled into a bowl of soup beans. If you have trouble turning out the baked bread, just serve it from the pan. (From Cooking Light)
1 Pd Ground Turkey
1 Can cream corn
1 pouch Instant Potatoes
1/2 c. onion
Salt & Pepper to taste

Absolutely excellent chili using canned black soybeans and a true 30 minute, 1 pot meal. Have your local supermarket order them for you, or buy online from netrition.com. Beans are very high in carbs and are not permitted on most low-glycemic or low-carb diets and the addition of black soybeans gives this a most authentic taste and feel. Serve with shredded cheddar cheese and sour cream.
4 chicken breasts, boneless and skinless
1/2 cup sour cream, reduced fat
1 8 oz. box frozen spinach
4 slices fat-free pepper jack cheese
4 slices turkey bacon
I freeze these and mashed sweetpotatos and then add a tossed green salad. Makes a fast weekday meal with good portion control. If you use just egg white you can lose 5 g of fat. But I find it moister with the whole egg. Too freeze sweetpotato make mashed and add some lemon juice to retain light color and then freeze in 1/2 cup servings.
During a trip to the Turkish coast, my friends and I gobbled down vegetarian bulgur "meatballs," called yalanci cig kofte. "Yalanci" means liar because the bulgur and potatoes are used instead of raw meat, as in the original recipe.
This is a quick and easy dinner idea for a family. My kids love this and it is good for them too.
