This is a recipe that my mom used to made for us when we were children.
Braised leeks and fennel top off poached cod fillets. Easy and filling. I couldn't believe I liked this since I don't like fish!
Canned smoked salmon can be found at Sam's Club. I use that instead of regular salmon to add a lot of smoky flavor.
Modified from the South Beach Diet shrimp recipe. The seasonings are to your taste, but I have found that about 1 tablespoon of the parsley and oregano work nicely. You can also use white white instead of vinegar. Some people have suggest using a little bit of chicken broth, but that is optional (1/4 cup if you do). I serve this over a bed of fresh spinach with a nice wheat roll, or just over rice. The servings are for 4, but you can alter it.
My husband wanted some crab pasta and we had some light creamy sauce in the pantry so YUM YUM was invented! Enjoy!
We love tuna noodle casserole and is just another version of one I make. I had some evaporated milk that needed to be used so I started mixing. Yum, Yum!
Once again I needed to use my zucc and just started throwing things in. This has onions and cheese which are my favorites, but it's low in fat. With the use of fat free evaporated milk you get creaminess. Yum!

I had been wanting a new way to try canned salmon that maybe my kids will eat it. They are 5 and 6 right now and don't like the fishiness of salmon patties. Maybe this will be different enough.
This was awesome the first time I made it before Sparkpeople, of course, I also use a bit of oil then. I will try tweeking it a bit and see if it turns out better.

I ran across this recipe in a kraft magazine and usually don't like stuffing recipes, but since I like salmon patties and wanted to try something new for my family I gave it a try. It's quite tasty!
