I am doing gluten, corn & preservative free right now. This recipe is my usual--tweeked to fit my diet needs now. Removed corn, cheese, premade taco seasoning. I actually used a fahita season mix that had no corn, soy or maltodextrin to fit my diet.
This is high in calories, protein and sugar but has been a life saver for energy drops recovering from Covid.

I love these for a dense, high-protein, low fat breakfast scone. The flavor will vary depending on your particular protein powder - I used a very sweet vanilla-flavor, but I think it might be even better with an unsweetened version.
I used rice and millet flour because I had them on hand, but you could use another combination of flours if you like. Regular whole-wheat would work great too, if gluten isn't an issue. Toss in a handful of oats (GF if you need!) or some chopped almonds for an extra kick.
You know that amazingly easy flourless peanut butter cookie recipe that's been floating around the internet since last summer?* Well, I've adapted it to make it easier and better! I substitute honey for sugar and they come out beautiful every time. Also, I spread them into a rectangular bar pan to make cookie bars, which eliminates the time it takes to make individual cookies (which helps with my delayed gratification issue). I even eat these for breakfast without feeling too naughty.

I'm going to serve it with roasted sweet potatoes and roasted mixed veggies (broccoli, cauli, and leeks, tossed with olive oil and roasted 'til browned).
I made these for the first time and they were not only easy to make, but the first gluten-free product I've ever made that tasted perfect! Doesn't hurt that you can finish up the bottle of pink champagne while you work.

This is an awesome cucumber salad that can be as spicy as you like it. It uses my favorite ingredient ever: toasted sesame oil!
