A nice hearty soup, the flavors of the tahini and peanut butter bring out the sweetness of the collards while the lemon, red pepper and ginger give it some zing. Optionally the chicken can be left out to make it vegetarian. The recipe is very versatile, feel free to play with it.
These meatballs are large and filling but still reasonable calorie wise. They are also gluten free.
A chowder of potatoes and canadian bacon. Can be served as is or add a small amount of half and half or sour cream to each bowl.
You can substitute different fruit in these, but keep the volume consistent and type for type... eg fresh or frozen blueberries for apples, or dried blueberries or raisins for craisins. You can also substitute mashed banana for applesauce, and change out the cinnamon for something else if you want. Nuts would also make a great addition. The streusel topping is totally optional. Banana with peanut butter and bacon bits would be awesome.

I was craving something sweet and put this together when I got home yesterday.
I've been trying to eliminate wheat in my diet. I love hermits and had enjoyed the hermit recipe from the Pink Ribbon Diet, which uses olive oil in place of unhealthy fat. I based this on that recipe, substituting ground flaxseeds, oat bran and GF baking mix for the flour. I cut down the brown sugar, substituting agave nectar, and also added pumpkin, to boost the nutrition and because I like it.
These are *not* diet brownies. They're good enough to serve guests.
