My original recipe calls for regular flour, a tsp of salt and a TBL of sugar. But my husband needs to eat gluten free now so I tried this with rice flour instead and cut the salt in half. I also lowered the sugar amount and added stevia. They came out fairly decent.
This coconut slice can also be made into balls. A guilt free chocolate fix!
I made this up for a friend's daughter. I was pleased with the way they turned out, but might try it with only corn flour and no cornmeal.

Just finished eating it - its pretty juicy, and basically tastes like chili, but combined with the enchilada sauce recipe, it makes a great, high fiber, low calorie, ultra filling meal
This is a low fat and low calorie bake. You can sub for 1% milk and use a different cheese or meat to reduce calories. This is just over 400 calories for the 3 servings it makes. Which is acceptable to eat as one person if you like a hearty breakfast that gets you going.
You can use extra baby tomato and scallions as most diet plans count these as “free” foods
