I love Lasagna but face it a lot of calories. Here's a healthy choice; no pasta (gluten free); no meat (low cholesterol); lots of veggie; low fat cheese; and easy to make!! Low calorie, cholesterol, High calcium, protein, potassium.
Recipe is from Washington Fruit Commission. Use Bing type cherries for color, yellow cherries would taste fine but visually blend in to white quinoa. Very low calorie, high fiber, lots and lots of trace minerals. Can omit shrimp to make vegetarian & still have plenty of protein from the quinoa. Made it tonight--cherries and shrimp go surprisingly well together!
I love this, you can spice it up any way you like depending on the flavors you crave.
It's not often a person can who is gluten free can get fried rice, but its so easy to make!
I made these bigger than I planned so they are higher calorie than I hoped, but will have to spread one out per day!
