I am a gluten-free vegetarian, and my family is not. I made this one night when I was tired of only eating side dishes. It was so good, I ate two of them!
Two kinds of meat, two kind of beans and chili salsa - delicious Serve on a bed of green beans, or along side asparagus and Brussels sprouts (or any other favourite green vegetables) etc.
2 1/2 Cup Rice Flour
1 2/3 Cup Potato Starch
3 t. Baking Powder2
2 1/2 t. sugar
1/2 C dry buttermilk powder
1 C less 1 T butter
2 t. xanthum gum
Mix together all ingredients - Store mix in refrigerator or freezer.
I take this to work as lunch, it is glorious !
I put the bellpepper, tomato, cucumber , and radish on the bottom.
On top of that I put the chopped spinach.
Chicken on top of that, and lastly sprouts.
This will keep the juices from the tomatoes, and cucumber dont wilt everything and everything still has its original texture at lunch time.
I package the feta and the oil in on container and the roasted almonds in one.
Another version of a gluten free cake using a small amount of chickpea flour and eggs as a bulking agent.

Since I did not have pumpkin or sunflower seeds, I doubled the sesame seeds.
This is perfect on a snowy night;. For something different but really good, top with a scoop of sweet slaw to serve. Use grass fed, high quality meat if possible, and organic ingredients as you're able.
Makes a great high protein dessert. This is so good I would serve it for guests. To make it fancy, layer the three items in a tall wine glasses.
