Leave out the Pecorino cheese, and it's all vegan! If you don't have a Vitamix, you can make the sauce in a food processor, but you'll have to soak your cashews for about 2-3 hrs first.
Healthy! And low calorie compared to some other options. The best way to do this is make it ahead of time so all of the flavors can blend overnight. I liked it ok right after it cooked, but the next day it is ten times better. Top with fat free cheddar cheese and some crunchy tortilla strips.
