This is my daughter's recipe. Incredibly delicious served with a salad, corn on the cob, and whole wheat garlic bread.
These have much healthier ingredients than regular biscotti, but still taste wonderful.
Eggplant layered with fresh sliced tomatoes, and fresh mozzarella covered in marinara sauce and topped with a portobello mushroom and a dollop of basil pesto.

Use over pasta or rice or as a base to vegetable soup. It has a slightly sweet flavor and a mild hot spicy taste which can be increased or deleted by adapting the amount of fresh Jalepano pepper.
