I wanted to make myself soup but to increase my protein intake too. I am not a chef so the preparation might not be the best. I just made it up and it tasted very nice.
I also add green onions, chopped celery, parsley, tumeric and other herbs to taste.

It warms the heart and satisfies w/out many carbs. Useful substitutions: 1 stalk leeks for onion, rice wine vinegar for apple cider vinegar, mix of shitake, oyster, and baby bellas for only baby bellas. Good additions bamboo shoots and/or water chestnuts. Has a good crunch even w/out these.

This is a great low cal dish that includes lots of vegies. You can be creative and add different vegies. you can add any hot sauce u like as well as Chili flakes at the beginning.
