I can't remember where I found this recipe, but 1 serving is 3 tacos! This is the actual recipe as written, but I like to check as I go and adjust the spices. Sometimes I add a little chili powder or a little less jalepenos. Depends on how spicy my mood is. This is really flavorful and very filling. I started making this recipe when I lived by myself, so it's for one serving, but it's very easy to double or triple for more people. If you aren't that hungry, you can lower the fat and calories by eating only two!
I love the taste of tomatillo salsa so much that I have been growing my own for the last couple of years. This is the best chilaquiles recipe I have come up with yet! It is traditionally served for breakfast, but we love it for dinner.
You could easily substitute white beans for the chicken in this recipe for a vegetarian meal.
I included the original recipe, but I made it slightly differently to make it easier to take to work over the week. I mixed all the cheese in, as well as the fresh salsa. Then just plated it with some chopped romaine.
