To make this vegetarian use vegetable broth instead of chicken. We like to add hot sauce, sour cream and grated cheese at the table.
I like to serve this with a topping of low fat greek yogurt (or sour cream), low fat grated cheddar cheese and thinly sliced green onions. This is also great on a green salad to make a "taco" salad meal.
This is great in tacos, on salad or even over rice. Add your favorite fixings and enjoy.
We like serving this over toasted whole grain hamburger buns, bread. Also yummy over rice or a green salad. Top with a little low fat tex-mex cheese and a bit of low fat sour cream or greek yogurt.
