This is an adaptation of 2 recipes. Topping inspired by J.Hayes who blogs, Loving My Nest. The Mayo Clinic inspired the corn bread. Topping is a one skillet dinner. That is served over cornbread. Not a super low carb meal, but it is diabetic friendly.
Super fast and easy chicken quesadillas. However, it uses pre-packaged spice packets just in case anyone is strictly clean eating.
I found this recipe on crunchycreamysweet.com. I love the simplicity and there is no flour in this one.
You can add tortillas to this to make it chicken tortilla soup, but that's not included in calories.
It isn't green, so I've been asked why I call it Chili Verde... until they taste it. You can always spice it up, with either medium or spicey green chilies or other types of spices, but this is a family favorite. Even my picky eater (ds) loves it!
Quick and Yummy Tacos. You can use the whole mix to make 8-10 tacos or make dinner tonight and freeze the mix to have tacos again another night. It also makes a great nacho meat mix if you want to change it up a bit.
