This salad was inspired by a wonderful meal at a French bistro; it's fresh, bright and perfectly suited to wintertime.
This is kinda thick to start but you can add as much water as necessary depending on how you are using it. For instance with enough water it would be closer to a salad dressing or you can omit any water and use it like a thicker slaw dressing.
The Surprise is that these cupcakes have no butter or oil in them, less sugar and less flour, but do use zucchini, and have a hidden spoon of strawberry jam!
