Found myself alone this weekend and decided to get a bit creative. Came up with this on a whim after looking through ingredients I had on hand. Easy to make, Easy to clean up and VERY yummy! I have enough to eat this for the next few days too since its only me and the filet was so big.
This is to die for on chicken and rice. Not low in fat or calories, but very nutritious and filling; it is high in protein and minerals.
serving size is 1/4 cup
For the late summer months, this mildly sweet and tart chicken dish is a warm, cozy meal. It's a great way to use your rhubarb!
