An incredibly delicious soup I whipped up using some sun-dried tomatoes that I had reconstituted in red wine. My daughter declared it to be "succulent".

This is a variation of a recipe from Stonewall Kitchens Roasted Apple Chicken Salad. I did not have the sauce it called for which really makes the salad taste better. I also added the FRESH mandarin orange on my own. It's not too bad but kind of bland.

I could not find the actual ingredients in the spark database so I had to settle for what I could find which made this recipe WAY OFF from the nutrition information the original recipe had.

If you use low sodium soy sauce, and sodium free/low sodium chicken broth in this recipe, the sodium count will NOT be as high as it shows. I only use home made chicken broth with absoultely no sodium except what is in the chicken itself. I also like mine a little bit on the spicy side so you can omit the chili peppers if you like.
