I looked at several recipes for baked eggrolls but none of them quite fit the ingredients that I was trying to use. I never stick to recipes so it wasn't too much of a stretch to make these quick and easy egg rolls. The most tedious part is rolling them.
Based on a recipe for Orecchiette with Broccoli Rabe and Sausage. I use bowties instead. I prefer to use broccoli instead of broccoli rabe in this recipe, use 1 pound broccoli cut into 1-inch florets and increase the cooking time by several minutes. If you prefer a less spicy dish, use sweet Italian sausage and it can be made leaner with turkey sausage
Texas-style pulled pork in a tangy chili-seasoned barbeque sauce with lots of onion. Serve on a buttered toasted sandwich round or bun with a light cole slaw!
This is a mishmash of a bunch of different crock pot (and non crock pot) pot roast recipes I found on the Web. Much inspired by the "Crazy Aunt Purl" blog (funny stuff!) but her recipe was written out as a narrative and thus not very useful for calorie-counting purposes! Plus I used ideas from other sources too. You can reduce the sodium by eliminating the sea salt and/or the bullion.
Note: For this recipe I used "Better than Bullion" turkey base, rather than beef or other bullion cube. It has about half the sodium of a normal bullion cube, so this recipe is already relatively low sodium (especially compared to similar recipes that use canned mushroom soup and the like).
A family favorite that we learned to like as native Floridians and as residents of Gitmo Bay during our stay on the US Naval Base when stationed there in the early 1960's.
This recipe actually called for beef tenderloin, but I couldn't find any that looked good to me, so I opted for pork instead. Enjoy!

1. Layer 1st 9 ingredients in slow cooker in order listed.
2. cover. Cook on high 4-5 hours.
3. Stir in milk.
4. Discard bay leaves before serving.

Great to use crockpot in summer. Can leave and forget and won't heat up the house.
Modified recipe after watching Ellie Krieger video. It did not give measurement for the Ricotta. I used lower fat ingredients. She recommended tomato sauce that did not have more than 500 mg sodium per serving and included olive oil in ingredients. I chose the brand listed as I use homemade sauce.
