This is a receipe that my mother made when we were younger. I am not sure what they are really called, but we all know them as rubber pancakes as the pancake has more of a crepe texture and not fluffy. We have also made this using wheat flour and although the pancakes are a little heavier, they still taste great.
I use this in the place of whole apples due to dietary problems. The apples and juice offer their own sweetness; however if more is needed I add 1-2 tbsp. honey or 100% maple syrup
