This is a quick iced coffee recipe I came up with after having some at Starbucks. It's easy and you can use your day old coffee, Splenda to reduce sugar, etc. You can add extracts to suit your taste!

Clean, filling, healthy low-fat, low-sugar with a light chocolate flavour...These muffins are from Oxygen magazine's Jan 2010 issue but I didn't have the exact ingredients so I subbed a couple. Add dried cranberries/raisins or choc. chips for a sugar lift.

Great no white flour or sugar muffins. Gluten Free and you can make them fat free if you want.

s.html. I modified it by eliminating the raisins as I do not like raisins. If you need a little more protein in your diet, add 1/2 c peanut butter in place of the oil. I've also thought about substituting apple sauce for the oil, but haven't had the nerve to try it yet.
I modified a yogurt recipe from the database. My husband is on a low sodium diet and my father-in-law who is diabetic was coming for a visit. I came up with this one and it was really good. With so few calories, everyone ate until they were full and we met everyone's diet needs.
This is a good hearty, healthy muffin that would be good for breakfast or snacking. Enjoy!
Note: If I weren't sharing these with a raisin hater, I would have doubled the raisins.
