I absolutely love chicken salad sandwiches, but with regular mayonnaise they can really throw a wrench in your diet. I decided to add the ingredients I really like with my chicken salad and substitute the mayo and that seems to really make the difference. I hope you enjoy it too!

This southern classic can easily be turned into a Vegetarian meal by omitting the turkey sausage and using vegetable broth. You can also use water in place of the broth to lower the sodium content. For you meat lovers, you can subsitute a different type of protein as you wish.
I cook simple dinners, and this is no exception. It's not dark or crusty like some blackened chicken but it has a heavy cajun flavor with a little bit of herbs like blackened chicken does. Shown here in picture with 1/4 chicken breast done cajun style but not 'blackened'
This is a Southern Living Recipe (from the magazine and website). It is very easy and quite tasty. I listed it so I could calculate the calories and share the recipe with a friend. The original recipe calls for pork, but the 'options' for pork chops as an ingredient were so confusing I listed chicken instead (instructions for both included). (The picture is of the pork)

A different take on Chicken Pot Pie. Great comfort food, This is made from SCRATCH, NOT from cans, tubes, boxes, packages of junk that I found on the other Spark recipes. The crust is so flakey and good. It says to cook it in a cast iron skillet but the amount I ended up with made 2 - 8 inch pies + 2 more servings! You can add different vegetables if desired.
This recipe calls for Herbs de Province and kosher salt which is not listed in the Spark Database. I also used fat free HOME MADE FROM SCRATCH chicken stock.
