This is a spin off of the low fat vegetarian stuffed shells. I added chicken, spinach & onions to add flavor and more protein.
This is a recipe out of the Hungry girl book which I altered to use turkey instead of ground beef. My first go made 11 servings vs. her 16 so the calorie count was unfortunetly higher.
This stuff is really good and filling its like a really simple Chili, 1 cup was enough for dinner for me.

Boneless, Skinless Chicken Thighs marinated with Crushed Garlic and Pepper Flavored Peanut Oil, then oven roasted.
This is a lower calorie version than my original gumbo recipe. You can add more or less seasoning to fit your personal tastes. We prefer our heavily seasoned. The receipe is LIGHTLY seasoned, so adjust accordingly. I hope you enjoy!
Great LF chicken salad!! Fantastic & low carb on a bed of lettuce or low carb whole wheat wrap! You may also make into a healthy sandwich with your bread of choice. (Nutrition info is for the chicken salad only).
You may also substitute hellmans light mayo for the miracle whip. (This will increase your cals by 5 and fat by .6 grams per serving)
Another option is adding in 1 hard boiled egg to mix it up a bit. Keep in mind this will also alter cals/fat content.
*If you feel this serving size is too large for you, you may reduce the serving size so each recipe feeds 4 (this will in turn reduce the cals/fat per serving).
Simple recipe. Make some whole wheat pasta, grill some chicken, and add some Alfredo sauce.
