Easy Enchiladas that kids will love too!
This is a Latin twist on traditional spaghetti that my mom used to fix when I was a kid. It has quite a kick! If you like things less spicy, use mild salsa and regular diced tomatoes. I have enjoyed making this for my husband and I as a lower calories version of the food I loved as a kid.

Trying to sneak some veggies into my kids' diets, I came up with this and it was a big hit!
