My recreation of one of Eggchef's favourite dishes that I made for him to take with him to school in Ottawa. Fine French comfort food.
quick and easy, even from frozen, this taco meat can be used for tacos, taco salads, chicken burritos, and much more.
This is a go-to meal starter for me, when I've forgotten to plan for dinner, I will serve this as one of those meals above. I use the chicken breast tenderloins, put them in the pan frozen, cover and turn the eye on really low to let them quick-thaw.
Use the amount of seasoning and water your taco seasoning calls for for one pound of meat, if you like your meat spicier add more seasoning (adjust the water accordingly) or add a second can of rotel or a can of diced green chilis.
Chicken sauteed in garlic and red pepper and tossed with cooked orzo and fresh spinach. Very tasty!

This is a combo of my Chicken Pot Pie filling and my mother in-law's Biscuit Style Crust. They go together fabulously. This is awesome with a double crust, but if you are watching your fat intake, it is also yummy with just a top crust. Also, the homemade gravy is wonderful, but if you have leftover gravy or prefer to use canned or jarred, this is even easier. Enjoy!

Red, Hot and Blue serves a dish called Idaho Pig, with Pulled Pork for a total of 1022.61 calories per serving and that is without vegetables. Due to my allergies, it is one of the few meals that I can eat out and that is almost a full day's worth of calories for me. So I am remaking that recipe to a healthier portion size and with some healthier options. It is a great way to use the left over Thanksgiving turkey.
