Quick, easy and the Trader Joes --Asian Style Spicy Peanut Vinaigrette makes this salad a fav in our house.
Had this at Village Inn - couldn't ind the nutrition, so I tried to recreate it
This makes about 1 cup and is the perfect alternative to creamy Caesar dressings. I use this on my Italian Salami Pasta Salad.
Adapted from a Mark Bittman recipe in the NY times, I added bean sprouts and cut the oil significantly due to personal taste. I may try Miracle Whip later on with this combo instead of the oil / vinegar.
A creamy broccoli and cranberry salad with nuts and celery for kicks. I call it Dorothy in Oz because of the green and red contrasts.
Roasted and raw garlic both find a home in this delicious, zippy (and fat-free!) dressing. It's great over greens, but I like to toss it with (hot or cold) pasta or potatoes for a side dish too.

This salad is filling and very low fat. For extra protein, add chicken breast or the protein of your choice. This is a great dish to fill up on before your entree. It's nice and crunchy and very satisfying.
a lighter version of my favorite sandwich. i can't go too long with out a good chicken salad sandwich. this version is light and packed with protein!
