Easier than the Bok Choy Salad that I've made before, and very good in take along lunches with a freezer pack.
Since most commercial dressing have corn syrup in them (terrible for the carb count) I figured it would be easiest to make a few vinaigrette myself to spice up my salads.
I had this as a work party and had to make it. It is good good and very elegant
With the extra protein and avacado, this salad is small, but fills me up. I sometimes use iceburg lettuce too. It's a good lunch on it's own. I am surprised how long it keeps me satisfied on a busy day!
My family loves mexican so I make a lot of mexican oreinted foods. I just threw this together to go with tacos, enchiladas, etc. Good way to get your veggies in. You can also add sour cream, salsa, shredded cheese. Just be sure to add in extra calories.

2 6 oz Light Tuna in water
1 chopped celery stalk
2 tbs chopped red onion
0.5-1 tsp garlic powder
8 tbs Hellmans Light Mayo
