This is how I like my potato salad. It's a combination of what my mom used to make and my favorite deli potato salads.
My husband prefers a bit more mustard, so if you do also just add a couple more teaspoons of mustard.
Paprika sprinkled on top would be a nice touch also.

If you are looking for a fresh side salad opiton with a little kick and a spicy flavor, this one might do the trick.
You can add some hot pepper to this if you like, or substitute rice vinegar for the lime juice or pineapple for the mango.
This recipe can really be made with any number of vegetables. Additionally, the sodium content in the nutrition info is incorrect. You can soak fresh chickpeas overnight or use "No Salt Added" garbanzo beans and have minimal to no sodium content if that is of concern.
My sister gave me this recipe and I love it! You can replace the dried cranberries and pecans with the dried berry and nut of your choice.
This dish is great for pot-luck dinners -- make the night before to let the flavors blend. Also easy to turn into an entree salad, add diced chicken breast for a light summer meal.
