While trying to get more protein in my diet without the added fat (or a lot of extra calories) I came up with this...it's very tasty and satisfying.
An unorthodox but delicious and nutritious dressing. Keeps well and can be used on salads or as a topping for 'rice bowl' type dishes
Portabello mushrooms, imbued with basalmic vinegar and lightly sauteed in olive oil along with sliced bell peppers, cooled and served with a mixed green salad. A tasty summer treat.
Great summer time dish! The best part is it stays fresh in the refrigerator for up to two weeks.
In a covered saucepan, cook potatoes in boiling water until just tender, about 20 to 25 minutes; drain well. Peel and cut potatoes into 1-inch cubes. In a large bowl, add mayo, vinegar, mustard, celery, onion, salt and pepper; stir to combine. Add potatoes and eggs; toss gently to mix. Cover and chill for 6 to 24 hours. MAKES 12 servings.
These are all my favorite things all in one salad! I make a big container of this and have it available to eat whenever I get hungry. I typically use about a TBSP of Ranch for a large serving. A little goes a long way. It helps me to get a taste of real ranch than suffering through a bad low or fat free ranch.
