I adapted this recipe from other stuffed pepper recipes, essentially substituting the ingredients I like and have on hand to take advantage of the peppers from my garden. In this case I had cooked quinoa the day before, added black beans, shredded cheddar, diced tomatoes and chili powder.

Baking is a good way to get a lot of vegetables. It is a low calorie yet very filling, healthy, and warm salad that can be served as a main dish or side dish.
Yummy and easy way to fix veggies. Roasting them tends to intensify flavors. Try different combinations of vegetables.
I adapted this recipe from one I found online. I served it on the green leaves of the bok choy for company before Caribbean Pork Stew with Pineapple. Both were a big hit!
