Adapted from a recipe I found on-line. I subbed olive oil for butter, and toasted cubes of focaccia in the oven.
I first saw the use of Cauliflower puree being used on Top Chef, and then noticed it on other cooking shows. It intrigued me and I can't stand Cauliflower! But here I add them with mashed potatoes so I can up the value of the mashed potatoes, cut back on the calories, and extend the potatoes.
1/3 of a cup per serving.
This recipe is an adaptation of Hollybearsmom recipe. I added Greek Yogurt and a few more spices.
1/2 cup is a serving. Double or triple this recipe if you want to have enough for 4 or more people.
