A well balanced post exercise recovery drink. Used as a replacement to energy bars etc.
To be drunk within 1 hour of intensive exercise.
This is just a broken down recipe (48 mini muffins) of the already popular pumpkin spice muffins.
Tastes just like a gourmet version of the one in the pop-top cans you ate as a kid. The original recipe, which I believe was in Vegetarian Times magazine, used soymilk, but almond milk tastes just as good, and is much lower in calories. I also substitute agave, and the original recipe uses the cane sugar. The nutritional info is based on having agave nectar, not the cane sugar, in the recipe. I like to add a Tb of organic peanut butter for each serving (4 Tb for a recipe) at the end of cooking when it's hot, so it melts in nicely, but firms up and tastes awesome. Enjoy!
Even if you're not a pumpkin pie fan, you'll enjoy this bread. I used 4 mini loaf pans (4x6). I swapped half the sugar for Splenda but when adding the recipe here, it wouldn't give me any other choices for measurement except tsp. so the nutrition info is for 1 cup of brown sugar.
Cucumber, Dill Weed, Sour Cream, & Cream Cheese mixed as spread or dip. Great with flatbread or naan.
Chopped scallions add flavor to the combination of fat free sour cream, fat free cream cheese, and shredded cheddar. Spread goes great on a toasted sandwich slim or pita.
This may not sound like something one would put together. But believe me, it is one of the best snacks you will have ever had.
An incredibly easy, really healthy dip! Just roast the squash and toss it all in the processor!
The consistency of the squash once roasted is smooth enough that lots of oil isn't necessary to hold the chickpeas together.
Also great as a sandwich spread - especially with leftover turkey!

I went to the grocery store hungry--big no, no. I saw the Spinach dip. It seemed to say to me, you've been so good. Be bad. I resisted. I came home. I approximated a full fat spinach dip as best I could. I may definitely make some changes, but this is one recipe I had to write down, save, and maybe you will make some cool changes that will help me improve it.
