This is a yummy pumpkin bread that I make using whole grain flours, less sugar than the original recipe called for, and extra pumpkin (you can use the whole can).
Cut fruit into bite sized pieces. Mix yogurt & cool whip together and toss fruit to coat.
This is great on toast, or any open faced sandwich. I used a one cup food processor to make this. Also, I grind my own peanut butter at the co-op. It could also be used as a vege dip for celery or as you please. It IS sweet.

I was being lazy and not wanting to fix a snack before I exercised but wanted some protein. I had tried a recipe for a no bake bar using peanut butter, oatmeal and chocolate protein powder, so thought I would try making it without the oats and with vanilla protein Powder. When I took my first bite I was immediately taken back to my childhood and the potato candy my mom used to make at Christmas. Now I can have it without guilt when I need a quick protein stack.
This smoothie can be changed up to your liking with different frozen fruit. It can be eaten like an icecream, thick and spoonable, or like a drink. If you want to reduce the calories a bit, you can omit the orange juice and add water if you need to thin it out.
