When I was in college and home for the summer, my best friend and I would make this ALL THE TIME and live off it before heading out to the beach. I made it the other night, and decided it's too tasty to NOT share.

A lovely filling soup that can be served hot or cold, making this a year round offering. I've set it at 6 servings for using it as a full meal. It will be less (obviously) if you're having it as a starter. Also, I used Blue Dragon Coconut Milk Light, but the recipe analyser isn't recognising the decreased calories for some reason. This means that there's a 525 calorie difference, which, if you divide it by the number of servings (6) means that each serving is 87.5 calories LESS per serving than is shown here.Submitted by MRS.DORMOUSE
This is a quick, easy, and very tasty salad that is actually filling. You can play with the quantities of fruit or use substitutions, whatever is on hand will probably taste good as long as the fruit is firm. We used Girard's Light Champagne Dressing (2 tablespoons = 60 calories) but many others would be good too. You can also hold the chicken to make an easy vegetarian meal.Submitted by FIREFLYJD
This is an adaptation to the traditional South Indian Korma. I have left out the coconut, sugar, heavy cream, and half the butter. I also chose chicken instead of lamb for a better calorie count. This recipe can be vegetarian by omitting chicken or vegan by substituting in soy milk.Submitted by SYBIL31562
