This is a good, year-round soup/dish that can be served by itself as a complete meal, with or without meat, served with our without rice.

I specified chicken for this recipe , but you can substitute the chicken with pork (butt part is best, just trim the fat off), beef stew meat, even shrimp or fish ( salmon or milkfish preferred ).

The amount of meat and vegetables depends on how much you want to put in. Add more lemon to make it more sour.

This is a great start to your morning full of vitamines and proteins. I only used half a serving of the Morning Star Veggie Bits otherwise the egg, salsa, cheese and veggie bits wont all fit in the tortilla..ha! This is a quick, easy, and very tasty salad that is actually filling. You can play with the quantities of fruit or use substitutions, whatever is on hand will probably taste good as long as the fruit is firm. We used Girard's Light Champagne Dressing (2 tablespoons = 60 calories) but many others would be good too. You can also hold the chicken to make an easy vegetarian meal.Submitted by FIREFLYJD
