My vegetarian ( or vegan) version of Jambalaya. I'm easy on the heat but you can add more cayenne pepper and some Tabasco to taste. If you want the recipe more soup-like, you will probably want to add more water.Submitted by MISSTOYOU

To keep it healthy, you probably ought to figure one medium potato per person. However, you may crave more. Just a warning. I use red potatoes and leave the skin on. More fiber and potassium.

Yummy eggrolls stuffed full of veggies. For lumpia (what I've been told is the Phillipine version of egg rolls) use spring roll papers. We use these as a meal but make a great side or appetizer too!Submitted by MISTY_RN
