Ditch the toaster pastry. They're loaded with sugar and fat--and not much else. My hand tarts are full of fruit, and if you make them ahead of time your kids can grab them and go.

I make these Breakfast Burritos ahead of time, wrap individually in plastic wrap, and then freeze them for up to 3 months. When I know my morning will be busy and I need a quick on the go breakfast, I pull out a burrito to thaw in the fridge overnight and then remove the burrito from plastic wrap and put in a paper towel in the microwave for 30 - 60 seconds.
