Stuffed Broiled Portabella Mushrooms

Excellent as a main dish with a salad or in a sandwich (bread not included in the nutritional info)
I fix multiples of the filling and bag it in serving portions and freeze them. Makes a quick fix dinner and I wash the saute pan once.Submitted by JAN581

Weezie's Cheesy Fajita Veggie Egg Casserole

Based on a recipe from a superb low carb cook, I've "Texanized" the original. Have it plain OR garnish with your choice of salsa, sour cream (or Greek yogurt), chopped pickled/fresh jalapeƱos, chopped tomatoes, sliced/chopped avocados. The almond flour is really optional, but included in the nutritional statistics. The ricotta cheese blends in so well, you won't know it's there -- but adds some wonderful protein to the stats.Submitted by LKEETON

90 Calorie Big Spaghetti Bowl

Using shirataki noodles and a low calorie sauce, you can have a huge bowl of spaghetti that is under 100 calories and loaded with fiber!

NOTE: The nutritional information is calculated for plain shirataki noodles. If you use tofu shirataki noodles, you will be adding more calories.Submitted by ANDREW3987
