I love coleslaw! I found that it was so high in fat and carbs that I never ate it until I figured out the Tofu Mayonnaise. Now, I can have all the coleslaw I want and not feel guilty. It is perfect before eating a meal because it is high in good fiber and helps to fill me up without over eating.

i recommend home-made chicken stock so the soup has a good, natural thickness. If using store-bought you may have to thicken soup with a roux. also, feel free to add more potatoes or corn or whatever, these are just my proportions. Next time i make this i will add some pulled chicken. i sprinkled a little shredded cheese on top before i served.Submitted by VBALLER101
This salad can be adopted in many different ways. You could add a variety of other vegetables or even pasta if you want to make it a pasta salad. I also put this on top of lettuce for an instant salad with little salad dressing but lots of flavor! You could save fat in the recipe if you eliminate the parmesan cheese, but I like it for flavor and texture. Additionally, you could use Ranch or another type of dressing if you like.
