Reminiscent of traditional Meat Loaf but without all the meat, dairy, eggs, or badness. This version is low on calories and fat, reasonable in sodium and carbs, and high in delicious.
Sometimes i'll have 2 servings and it's still quite reasonable. Either way I like it with peas. Mmm.Submitted by KATJWINTER
Recipe from http://eatingwelllivingthin.wordpress.com/2010/11/01/love-my-quinoa-burger/ I just substituted organic red quinoa instead of the regular quinoa in this recipe, and added more flour which was necessary to keep the patties together. Also, my patties were smaller so it yielded more burgers. Submitted by B_OOKIE
This is a bright salad with a bold dressing made from lemon juice, cumin and turmeric. Crisp apples and crunchy almonds provide textural contrast. It is a different salad that is oh so healthy.

I love this recipe because it is 3 easy ingredients heated together and you're eating in 15 minutes max. If you are like me, you try to cook on the weekend and have stuff you can throw together when you get there. If you have the time, you can cook the rice, it just adds time.Submitted by DEBORASAYS
My version of Mac n' Cheese for school. In the amount of time it takes to cook the pasta, I had a luxurious cheese sauce ready! Poured into the casseroles, sprinkled with more cheese and whole wheat breadcrumbs, it was declared "Best Mac and Cheese Ever" by the kids (and I think the old cook was jealous!)Submitted by JO_JO_BA
A comfort-food makeover, that uses creamy low-fat cottage cheese in place of some of the regular fat cheese. The spinach tucked into the middle adds a vegetable serving, and the whole-wheat pasta adds extra fiber.Submitted by FLERLY
