This is one of my family's favorite dishes! This can be served over polenta or rice, and of course makes a great taco filling. You can also make it into more of a stew by combining it with diced tomatoes. You can adjust the spices to taste--the recipe is calculated using standard chili powder, but if you make your own (salt-free) blend and use no salt added tomatoes, you can make a low sodium version!Submitted by CD1086014
I was AMAZED at the creamy flavor and taste! Plus, using the ingredients as listed, this dish is filling, healthy, low in calories (210) and fat (6g)! The way the mushrooms, cheese, and garlic blend together is yummy. *I'll put up a photo when I get home from work*Submitted by CD3370322
I threw this together from what I had in my pantry at the time. With proper planning, I'd use fat-free soup and sour cream. It is delicious as-is, but fat could certainly stand to be cut.
You can put the chicken into the slow cooker while still frozen, so prep time is virtually non-existent! A great choice to throw in before bed for lunch at work or in the morning for that night's dinner.
This recipe calls for two pounds of chicken, also because it was what I had available (three large breasts), but would make a great meal with just one pound, too.
I served this along with brown rice and black beans. Tasty!Submitted by BLUEKITTEN
This spring time stew is a must have at any Derby party! Traditionally made with pork, beef, chicken, and rabbit, I've added more veggies and lightened the meat. The best part: This is a slow cooker recipe, so the burgoo will be ready when the horses are loading into the gate.
