Brown sugar caramelizes with a blend of spices to make a light crusty envelope encasing succulent, tender apple chunks. It emerges from the oven smelling like a grand apple pie, but is much more portable!Submitted by JO_JO_BA
Who doesn't love sweet potatoes and walnuts? These delicious items are packed with nutrients and vitamins and are perfect for breakfast, a quick snack or tea time. Taken from an inspirational pescatarian, she used three mini loaf pans for my bread – you can use a muffin tin or a large loaf pan, its up to you.Submitted by NULYFENUME
Easy to make, high fiber, and no grains of any kind. Great for a low-carb diet or just a flax fanatic like myself! Submitted by KRAVMAGAGIRL
A great "whey" to use the leftover liquid if you make your own cheese (paneer) using milk. To make it a bit healthier, I substituted light margarine for baking for the vegetable shortening called for in the original recipe. Source: online, exact source unknown.Submitted by YASMINDURAN
Banana and oatmeal are a perfect pair in these not-too-sweet treats.
I've been trying to create the perfect cornbread. I think I'm almost there! The whole wheat flour gives it a nice density but with just enough cornmeal to create the perfect crumbly texture. My ultra-picky boyfriend downed four pieces of this at dinner! The recipe is very simple; I whipped it up in about 10 minutes.
Don't have any buttermilk around? Simply add a tablespoon of lemon juice to 1 cup of milk, wait 5 minutes and use. You can also easily substitute an egg for eggbeaters, butter for margarine, or sugar for Ideal if that's all you have around. Just be sure to adjust the calories accordingly. Enjoy! Please let me know how you like it!Submitted by ALYSSAGB
Heres a little recipe I worked out, and Sweet Potatoes are full of vitamin A! These sweet potato or yam muffins have less than 100 calories each and less than a half a gram of fat each! They come out to just under 1 gram of sugar each, but i use no sugar in them so these are naturally occuring. By the way no these are not "mini-muffins"! Feel free to use regular muffins tins like I did... They are a great harmless snack or breakfast addition. To get your vitamin A be sure to pair it with a healthy dietary fat (we need fat to absorb the A) - breakfast with 1 ounce of reduced fat cheese and a piece of fruit is great! So low cal you can mix and match often- and made with whole wheat flour- so you are getting your healthy whole grains and their awesome antioxidants! Enjoy!
*Don't be scared of the prep time- its just for boiling sweet potatoes. I forgot to add the temperature before but I included it now: 425 F. (its in the recipe text now too) Let them cool completely! Even chilled in the fridge helps them to "set". Submitted by LIFEHASCHANGES
This is an earthy, moist, cakie quick bread with a rich brown crust, crunchy edges and a slightly gritty bite. For the ultimate experience, use stone-ground flour and a heated heavy pan to supply the required crustiness. You can reduce the cereal to 1/2 cup and add 1/2 cup stone-ground corn meal for a more gritty bite.Submitted by OJAISTER
