Creamy pudding makes fantastic frozen treats.
Make sure salmon fillets are 6 ounces each and use ground cumin.
To make salsa, combine mangoes, bell peppers, onion, chopped cilantro, garlic, pineapple juice and lime juice in medium bowl. Mix well and season to taste with sale and jalapeno.
Prepare grill and heat to medium hot. Coat salmon lightly with oil run with cumin and sprinkle with salt and pepper. Place fish on grill and cook 6-8 minutes on each side. To check for doneness, cut into one fillet, it should be opaque throughout.
Remove salmon from grill and top each filet with several cilantro springs and serve, passing remaining salsa separately, Makes 4 servings.Submitted by RHAINON9
