As a vegetarian household, we especially LOVE the time of year when the days are long and hot, and the squash are plump and plentiful! This recipe is from a dear family friend and has been passed down through generations of her large Italian family. It uses loads of zucchini, and is both freezable and delicious! It does take a long time to make and requires quite a bit of work - but I promise, itís WORTH it! So very moist and NO ADDED eggs or oil!
Obviously mayo is made from eggs and oil. Also, I use Hellman's (Best Foods) Light Mayo but it is still pretty healthy with regular. Moistest cake ever though. The family loves it. For real decadence frost with Sander's Frosting. YUM!Submitted by DAKOTATURTLE

This recipe can be made as hot or mild as you like depending on the curry paste you use. This is the recipe verbatim, but when I make this I don't measure anything, I just add everything by eye using a normal tablespoon or teaspoon (not a measuring spoon) and I find it tastes better. I also find making this early in the day and letting it simmer on very low for an hour and then letting it sit in the sauce until time to re-heat makes it more flavourful.Submitted by WEINERS74
