This single serving quick mini-meal is one of my little creations. Its great if your in a hurry but want something fun and even a little exotic you could say! It can be the main course in a lunch, or even a side for a creative dinner. Its even filling as a snack. I checked around and cheese seems to be considered vegetarian. I used basic ingredients so anyone can get ahold of them. I do suggest that if you have time you can throw in the fresh versions in an amount to your taste preference. Also you can use whatever type of sweetener for the sauce you like, however I use calorie free sweetener. Its a great starter recipe if you want to add your own variations too. Nutritionally, compared to an average restaurant portion, this recipe cuts the calories by close to 300, cuts the fat by 25 grams (including more than 10 grams of saturated fat). The cholesterol drops from 511g to 11g while keeping the carbs and protein fairly comparable!!Submitted by SUNNYONE68
These muffins are loaded with whole grains, fruits, and vegetables! This is a slightly different version of my Healthy Breakfast Muffins. This recipe made 32 regular sized muffins. Depending on how full you fill the muffin cups, I'd say you should get 28 - 32 muffins. Nutritional value is calculated on 30 servings (1 muffin = 1 serving).Submitted by JLREYNOLDS77
This recipe offers a yummy alternative to traditional lasagna. Don't let the tofu turn you away. I've had two people who didn't like tofu try my eggplant lasagna and they both loved it. They couldn't even tell there was tofu in it.Submitted by KEYPEROFTHEKEYS

I've just rediscovered quiche as a great quick meal for any time of day. The left overs last a day or two and make a great lunch to take to work and reheat.
