A delicious take on cole slaw without the mayo from a friend of mine. Contains almonds and sunflower seeds. I brought it to a party recently and people were saying how good it was, not realizing I had made it. That's pretty high praise! You can cut this recipe in half, too.
A fast dish that tastes great, and heats well for leftovers. Kids love it, perfect for college life.

I love making this soup in the summer with fresh yellow squash from my garden, as well as runner beans, peas, an ear or two of corn cut from the cob, a few fresh carrots, etc. tasty, and full of good veggies. Yum!Submitted by KEEYAHWE
